Food 4 Thought Friday ~ This week's questions

♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥♥
Breakfast
If your job made you move, but you could choose which country you would be living in, which country would you choose and why? The coast of Italy! Or a villa in France. They just sound romantic and fun!

Lunch
Do you have any phobias? I'm getting better but I really don't like the dark. I have a problem with mice and snakes!!

Dinner
What is something you can't help but spend money on? Well, I can't help buying groceries ( although I do threaten my family!) I often think of all the vacations and books I could buy if I didn't have to buy groceries!!

Midnight Snack
What profession/job did your parent(s) have while you were growing up? My father managed cattle ranches until I was 12 and then he worked at Autoliv as well as worked his own windshield repair business . After he retired he continued working with his business even up to the week he passed away. My mother worked as a homemaker most of her life and also managed several marketing businesses. She currently is working as a receptionist.

BEHS soccer season started off with a WIN!! After weeks of conditioning a grueling tryout followed by a two weeks of intense conditioning and a week of canceled games because of snow, BEHS boys soccer came off with a win against Salam Hills. Final Score 2-1

A new coach and some much needed changes were felt as the team started the season with a new tradition. "The Alumni Game." The past alumni of BEHS were invited to come to the game and play a 45 min game in between JV and Varsity. A special recognition was also given to past coach Delos Wiberg.

It was a fun afternoon at the BEHS soccer field!

Goodness! Gracious! Great balls of Fire!!

What a crazy couple of days! And sooooooooooo many things to write about.
Lindsey's kids came to stay with me Thursday to Sunday. What a ride. What little busy bodies!! Thursday night I was up all night with poor little Ammon with an ear ache! The next day I took him to t
he Dr. to find out that it was a double ear infection poor guy. At one point in the night he said to me " aunt Karen, I hate this ear!" He is quite the kid. I had so much fun getting to know their little personalities. Abbie, is a great reader for a first grader she loved to read to me and to do craft projects, Ammon head strong yet such a charmer, he could talk me into about anything with those dimples! Jerom quiet and soft spoken and such a hugger. And little Racheal, little with a powerful personality! Such a drama queen in every since of the word, she is the boss of the family and puts everyone in their place, even Bella!!

On Saturday we had a baby shower for my niece Katie who is due in JULY! When I say we, I mean mostly Kim! I made the fruit salad and she did the rest!! What a cute mom Katie is going to be! The ultra sound predicted a BOY!!

After the shower we went to Yardib's Baptism. What a neat experience to be apart of. We have know Yardib for 5 years as a member of the soccer team. He is such a fun person to be around, always so happy and easy to get along with. Some of the team members challenged him to listen to the gospel message and he accepted. Daniel baptized him and other members of the team shared their testimonies and welcomed him in as not only a brother on their soccer team but now a brother in the gospel!

Then on to another baptism of our sweet neighbor Jackie! She has been taking the discussion with us and the missionaries for a couple of months. She has such a sweet personality and took the message of the gospel easily. She is a great mom and wonderful wife and a great example to me. She asked John to baptize her. It was a neat and spiritual experience. First one in our new Stake Center.

Yes a crazy and busy time! I love spending time with my nieces and nephews of all ages, they are a bright spot in my life! This has also been a great time for me to strengthen my testimony in the gospel of Jesus Christ. I am thankful for my knowledge of who I am and for the peace this brings.

"This is a wonderfully simple chunky soup. I use good quality Irish back bacon but if you can't get this, it tastes equally good made with pancetta. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour."
Ingredients:
1-1/4 pounds Irish bacon, diced
5 large potatoes, peeled and cubed
2-1/2 (15 ounce) cans diced tomatoes with
juice
2-1/2 cups chicken stock, or as needed
Salt and black pepper to taste
5 cups thinly sliced dark green Savoy
cabbage leaves
Directions:
You have scaled this recipe's ingredients to yield a new amount (10). The directions below still refer to the original recipe yield (4).
1. Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat.
2. Stir in potatoes, tomatoes, and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and let simmer for 20 minutes, or until potatoes are tender.

A vision without a task is but a dream, a task without vision is drudgery, a vision with a task is the hope of the world.”—On the cornerstone of a church in England, dated 1730. Author unknown

I felt so blessed to stumble across this quote that has existed in stone for centuries and has now traveled across oceans to inspire me today. If you take the time to read it, and really think it through, there is so much truth to the simple words. Often, we have great visions—but we do not break down the tasks in order to complete them. Other times, we have tasks, but we don’t have a vision or purpose to make them fulfilling. Combine a vision with proper tasks, and we become engines and vehicles of change. Spring is on is way and so it can be with us.

Take some time to ask yourself:
What is your vision? Don’t let it be just a dream. Take a few moments today to consider your action steps. Take the next step.
